using two methods: traditional and modern. In essence, both of the methods used have a few steps that are the same like picking fresh leaves, withering, oxidation and frying.

leaves are picked. For a good quality of tea
, only the bud and top two leaves are picked and these picked ones go through the next stage
known as withering where air passes through the leaves on a rack which takes one-third of the moisture out of these leaves.

broken under the rolling stage
and the leaves release the enzyme. Once the leaves are rolled, they are spread on the tiles for oxidation/fermentation where the colour of the leaves changes to copper due to

is firing and drying where the leaves are transferred into the oven or hot air dryers at this
stage
, 97 per cent of moisture is removed and finally
flavour and aroma are released from the leaves.

of loose leaves, tea
bags are used and leaves are cut, torn and curled in the cutting stage
